Out Standing in their Fields has now been to Kerikeri with local chefs Colin Ashton and Rolf Simons cooking up a storm on Sunday 16th October.
The live and free cooking demonstration was part of a nationwide series of cooking shows designed to showcase food-excellence during the time of the Rugby World Cup. Kerikeri was the second last stop on this tour, inspiring flair of cooking with locally sourced, seasonal ingredients.
Award-winning chef Colin Ashton and top-chef Rolf Simons showed us just how it is done, combining expertise with produce-availability to create unique fusions of flavour and texture.
Preparing
Organic Ricotta and Beetroot-Gnocchi with Herb&Macademia-pesto, Colin Ashton used the eye-catching contrasts of maroon-red and lime-green to draw awareness to the importance of colour in food-presentation.
Whilst Rolf Simons focused on complexities of flavour with his starter of
Pork dumplings with sweet and sour cucumber-salad and coriander-chilli-tamarind sauce; followed by
Brioche en croute with sauteed, exotic mushrooms.
